Ingredients

  • 2 pkg. (each 9 or possibly 10 ounce.) frzn cut green beans
  • 1/2 c. thin strips sweet Spanish onion
  • 1 tbsp. sugar
  • 1-3 c. extra virgin olive oil
  • 2 tbsp. white wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • Dash of cayenne
  • 4 slices bacon, fried crisp & crumbled
  • 1 c. thin strips Swiss cheese
  • 1/4 teaspoon dry basil, crushed

Directions

  1. Cook the green beans according to package directions and drain. Cover tightly and chill. Sprinkle the onion with the sugar, cover tightly and chill.
  2. In a small jar, shake together the oil, vinegar, basil, salt, mustard and cayenne; set aside.
  3. At serving time, turn the beans and onions into a salad bowl; add in the oil-vinegar mix and toss well. Add in the bacon and cheese and toss again. Serve at once. Makes 8 servings.
