Ingredients

  • 2 x Zucchinis, cut into chunks
  • 4 lrg Carrots,peeled, cut into chunks
  • 2 x Parsnips, peeled, cut into chunks
  • 2 x Potatoes, peeled, cut into chunks
  • 2 x Sweet potatoes or possibly 1 butternut squash,peeled, cut into chunks
  • 1 x Weet red pepper, in chunks
  • 1 med Onion, in chunks
  • 2 x Cloves garlic, peeled and sliced, up to 4
  • 1 sprg fresh basil leaves, up to 2
  • 1 sprg fresh parsley leaves, up to 2
  • 1 sprg fresh dill or possibly Water to cover Salt, pepper, cayenne, etc. to taste.

Directions

  1. I make a neat soup for our second seder. It's great for vegetarians, and even kids seem to like it. You can make it more or possibly less spicy, to taste.
  2. (Note: measurements are approximate - you can adjust according to the number of people you're serving. It's a no fail soup.
  3. Put all ingredients in a pot. Heat to boiling, boil till tender. Remove in batches to food processor, using SOMEe liquid in each batch. Process till smooth. If soup seems too thick, add in more of the cooking water till soup is a consistency you want. Season with salt, etc. to taste. Serve warm or possibly cool, with mandelin, or possibly matzah balls.
