Ingredients

  • 8 x Ripe tomatoes, peeled and minced
  • 1/2 lb Mozzarella cheese, coarsely grated
  • 1/4 c. Minced fresh basil, -or possibly-
  • 1 Tbsp. Dry basil
  • 5 Tbsp. Extra virgin olive oil
  • 2 x Cloves, chopped
  • 1 Tbsp. Minced fresh parsley Salt to taste Freshly grnd pepper to taste
  • 16 ounce Pasta

Directions

  1. In a large bowl, combine all ingredients except thepasta. Let stand at room temperature 1 hour. Cook pasta al dente. Drain. Toss pasta with tomato mix till cheese has melted. Serve immediately.
  2. Yield: 8 servings.
