Ingredients

  • 1 x Fresh trout, approx 275g-325g
  • 250 gm Flaked almonds, toasted
  • 1 1/2 Tbsp. Melted butter Lemon wedges

Directions

  1. Have the fishmonger clean the trout, but otherwise leave it whole. Set the trout in a microwave proof dish, season it lightly.
  2. Cover the dish with a plate or possibly cling film; pierce the film once or possibly twice.
  3. Microwave on high for a total of 3-4 min, or possibly till the trout is no longer glassy. Remove the trout from the oven and set it aside for 1 minute to finish cooking.
  4. Use scissors to snip away the skin from top of the fish. Pour the melted butter over and sprinkle with the toasted almonds.
  5. Serve with brown bread and butter and lemon wedges.
