Ingredients

  • 3 med Beets cooked, minced
  • 3 x Oranges peeled, sectioned
  • 2 x Jicamas peeled, minced
  • 3 x Bananas peeled, sliced
  • 3 slc Fresh pineapple cut into cubes
  • 1/3 c. Sugar
  • 4 Tbsp. Wine vinegar Lettuce leaves
  • 1/2 c. Minced peanuts Seeds from one pomegranate
  • 1 stk Sugar cane minced

Directions

  1. In a bowl mix the beets, oranges, jicamas, bananas, and pineapple together. In another bowl mix the sugar and vinegar. Toss the fruit with the sugar dressing, then refrigeratethroughly.
  2. Line 6 salad plates with the lettuce, fill the center of each with the fruit, and garnish with peanuts, pomegranates and sugar cane.
  3. This recipe yields 6 servings.
