Enchilada Chicken Casserole Recipe

Ingredients

  • 2 1/2 c. Chicken, diced, cooked
  • 15 ounce Evaporated lowfat milk
  • 10 ounce Cream of chicken soup, undiluted
  • 1 1/4 ounce Taco seasoning
  • 1 med Onion, minced
  • 1/2 c. Celery, minced
  • 4 ounce Green chilies
  • 6 x Corn tortillas, torn into 1" pcs
  • 3/4 c. Cheddar or possibly longhorn cheese, diced

Directions

  1. In 2 qt casserole combine chicken, evaporated lowfat milk, soup, taco mix, onion, celery, chilies, tortillas, and cheese. Microwave at High 11 to 13 Min, rotating dish 1/2 turn after 5 min.
