Tex-Mex Chicken Casserole is an easy and delicious recipe for a weeknight meal that will end up as a favorite dish for your family. Ingredients include bonelss, skinless chicken, bell peppers, beans, tomatoes, cream cheese and shredded cheese. Ingredients
- Non-Stick cooking spray
- 3/4 lb boneless, skinless chicken breasts, cut into bite-size pieces
- 2 tsp ground cumin, (adjust as desired)
- 1 green bell pepper, chopped
- 1-1/2 cups thick & chunky salsa
- 2 oz (1/4 of 8-oz pkg.) Neufchatel cheese, cubed
- 1 can (15 oz) no-salt-added black beans, rinsed
- 1 tomato, chopped
- 2 whole wheat tortillas (6 inch)
- 1/2 cup finely shredded (Mexican 2% four cheese blend), divided
Directions
- Preheat oven to 375º F.
- Cook and stir chicken and cumin into a nonstick skillet sprayed with cooking spray over medium heat 2 minutes. Add in the bell peppers; cook 2 minutes, stirring occasionally. Stir in the salsa; cook 2 minutes. Add in Neufchatel; cook 2 minutes or until melted. Stir in the beans and tomatoes.
- Spread 1/3 of the chicken mixture onto the bottom of an 8" square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture.
