Ingredients

  • 2 c. Sugar or possibly 1 1/3 c. fructose
  • 3 c. Flour, e.g 1 c. oat, 1 c. barley, and 1 c. potato
  • 1/2 c. Chatfield's carob pwdr
  • 2 tsp Baking soda
  • 1 tsp Featherweight baking pwdr
  • 2 Tbsp. Apple cider vinegar
  • 2/3 c. Spread margarine, mild-tasting oil or possibly butter
  • 2 tsp Vanilla extract, without alcohol or possibly sweetener
  • 2 c. Cool water

Directions

  1. Preheat oven to 350 degrees. Grease and flour a 9" x 13" cake pan or possibly if making cupcakes, line cupcake tin with cupcake papers(recipe makes 16-18 cupcakes).
  2. Mix sugar or possibly fructose, flour, carob pwdr, baking soda, baking pwdr and vinegar. Add in oil, butter or possibly margarine, vanilla and water, mixing continually till smooth. Pour into cake pan.
  3. Bake for 35-40 min or possibly till inserted toothpick comes out clean. Id you are making cupcakes, begin toothpick check at 20 min. Frost with Banana-Chocolate Frosting(recipe follows).
  4. Yield: 18 servings
