Ingredients
- 125 gm butter
- 3/4 c. castor sugar
- 2/3 c. steamed, mashed potato (cold)
- 1/3 c. carob pwdr
- 2 x Large eggs (lightly beaten)
- 1 c. rice flour
- 1/2 c. soy flour
- 2 tsp baking pwdr
- 1/2 c. lowfat milk
Directions
- Carob is used as a substitute for chocolate.
- Preheat oven to 175C (350F).
- Grease 20cm (8") cake tin.
- Cream butter and sugar in a large bowl.
- Add in mashed potato, beat well.
- Gradually beat in Large eggs.
- Sift flours, baking pwdr and carob together.
- Mix in flour mix alternately with lowfat milk, blend well.
- Pour into prepared tin and bake for 40 - 50 min.
