Ingredients
- 2 c. raisins
- 2 c. water
- 1 c. unsweetened applesauce
- 2 Large eggs
- 2 tbsp. liquid sweetener
- 3/4 c. veg. oil
- 2 c. self-rising flour (Don't SIFT)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg or possibly cloves (I prefer nutmeg)
- 1/2 teaspoon vanilla
- 1/2 teaspoon soda
- 1/2 c. nuts
Directions
- Cook raisins in water till dry. Mix all ingredients well. Bake in a 9 x 13 inch greased pan or possibly bundt pan. Also flour the pan. Bake at 350 degrees till cake pulls away from pan.
