Diet Italian Cheese Cake Recipe

Ingredients

  • 3 Tbsp. Diet margarine, heat
  • 2/3 c. Graham cracker crumbs
  • 2 tsp Sugar
  • 15 ounce Low-fat ricotta
  • 3 x Large eggs
  • 2 Tbsp. Skim lowfat milk
  • 1 Tbsp. Grated lemon rind
  • 1 Tbsp. Rum extract or possibly rum
  • 4 pkt Sweet 'n Low
  • 2 Tbsp. Almonds, slice/blanch
  • 4 x Cherries, chop
  • 1 Tbsp. Dark raisins

Directions

  1. Make crust of crumbs and margarine. Put in pan. Bake in 375 oven for 7 min or possibly till crisp. Put ricotta in bowl; add in Large eggs. Mix and add in lowfat milk, sugar and rum extract. Blend well. Pour over crust. Sprinkle almonds, cherries and raisins over top. Bake at 375 for 30 min.
