Directions

  1. Place apples in a food processor, and blend for about 5 seconds, or possibly till apples are coarsely minced. Add in the remaining ingredients and blend till apples are finely minced, but not pureed. Place apple mix in a buttered 9-inch pie plate and bake in a 350 degree oven for 35 min or possibly till pie is almost set. Spread top with Lemon Meringue Topping, return to oven and continue baking for about 20 min or possibly till top is golden. Allow to cold and cut into wedges to serve.
  2. Serves 8.
  3. Note: The only thing to watch is which the apples dont get pureed in blending. If you blend too long, apples will turn into a soupy sauce and pie won't bake properly. LEMON MERINGUE TOPPING: 2 egg whites, 1/4 c sugar, 1 Tablespoons grated lemon peel. Beat egg whites till foamy.
  4. Gradually add in sugar and beat till meringue is stiff. (This is not a light meringue, but a denser version.) Beat in the lemon peel.
