Ingredients
- 2 c. cornmeal
- 1 c. flour
- 1 c. corn kernels
- 2 Tbsp. chopped onion
- 1 x egg
- 2 Tbsp. bacon drippings or possibly oil
- 1 dsh Cajun seasoning
- 2 Tbsp. baking pwdr lowfat milk oil -- for deep-frying
Directions
- Mix cornmeal, flour, corn, onions, egg, drippings, Cajun seasoning, and baking pwdr with just sufficient lowfat milk to make a thick mix. Wet hands and roll mix into 1-1/2-inch balls. Drop into heated oil and remove when brown. Drain on paper towels.
