Ingredients

  • 3 1/2 lb boiling potatoes Salt as needed
  • 1 lrg onion minced
  • 1 Tbsp. oil
  • 1 1/4 c. beef broth
  • 1 lb roast beef fat trimmed, and meat finely minced

Directions

  1. Cook potatoes with 2 Tbsp. salt in simmering water over medium-low heat till tender, about 20 min. Drain. Remove skins with sharp knife while potatoes are still hot. Cold, then chop.
  2. Saute/fry onion in oil over medium heat till tender, 5 min. Add in 1 1/2 tsp. salt to broth if needed (broth already will be salted if using concentrate). Bring to boil over high heat.
  3. Combine beef, potatoes and onions in 13- by 9-inch baking dish. Pour warm broth over beef and potato mix. Cover and bake at 350 degrees 30 min.
  4. Uncover and bake at 400 degrees till browned on top, 30 min. Serve with gravy, if desired.
  5. This recipe yields 10 servings.
