Ingredients

  • 3 Tbsp. butter
  • 1 x onion, chopped
  • 1 x bouquet garni of thyme, bay
  • 1 x leaf, parsley
  • 2 c. cider
  • 1 x salt and pepper
  • 1 lb fish heads, bones, tails,
  • 1 x skins and trimmings
  • 1 Tbsp. butter
  • 1 tsp flour
  • 2 x egg yolks, beaten
  • 1 x strip lemon peel

Directions

  1. Heat 3 Tbsp. butter in a saucepan and cook the onion gently till transluscent. Add in the bouquet garni, salt, pepper, cider and fish parts. Simmer 20 min, then strain.
  2. Heat 1 Tbsp. butter and blend in the flour. Slowly, stirring constantly, add in a little of the strained fish broth till it is all used. Add in the two egg yolks slowly, beating with a whisk over low heat till the sauce becomes creamy. Add in the strip of lemon peel, strain the sauce through a fine seive and cover the fish. Serve warm.
