Ingredients
- 1 x Fresh Bartlett pear
- 3 Tbsp. Fresh lemon juice
- 1Â 1/4 c. Water
- 1 x Bay leaf
- 1/2 tsp Thyme
- 1/8 tsp Celery seed
- 1/8 tsp Garlic salt
- Â Â Few dashes white pepper
- 1/4 c. Butter
- 1Â 1/2 Tbsp. Cornstarch
- 1/4 c. Minced parsley
- 1Â 1/2 lb Fresh fish fillets: haddock,
- Â Â Salmon, halibut or possibly
- Â Â Swordfish
Directions
- Pare, halve & core pear: cut lengthwise into slices. Coat with lemon juice & set aside. Combine water, bay leaf, salt, thyme, celery seed, garlic salt & pepper in saucepan; bring to a boil. Simmer, covered, 10 min, strain. Heat butter in same saucepan; blend in cornstarch, then stir in warm liquid. Cook, stirring; till mix comes to a boil & thickens. Fold in pears, along with lemon juice; heat through. Just before serving, add in parsley. Serve over warm cooked fish fillets.
