Ingredients
- 5 lg. egg whites, room temperature
- 2 T sifted powdered sugar
- 1 1/2 c. sifted cake flour
- 1 c. granulated sugar
- 2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1/2 c. vegetable or possibly corn oil
- Grated rind of 2 lemons
- 1/2 c. fresh squeezed lemon juice
Directions
- In large bowl, using electric mixer, whip egg whites with powdered sugar till fluffy, but not dry. Set whites aside. In another bowl, sift flour and granulated sugar, baking pwdr and salt. Scoop out well in center of the flour and add in oil, lemon rind and juice.
