  • 2 whl chicken breasts, skinned, split, and boned
  • 1 sm Ripe tomato, cored and sliced 1/4 inch thick
  • 1 med Zucchini, trimmed and sliced 1/4 inch thick
  • 1 x Leek, trimmed amd sliced 1/4 inch thick (including 1 inch of the green)
  • 1/2 bn Flat-leaf parsley, coarsely minced
  • 3 Tbsp. Chicken broth
  • 1 Tbsp. Extra virgin olive oil
  • 1 tsp Kosher salt
  • 6 x Grinds black pepper
  • 1 1/2 Tbsp. Fresh lemon juice

Directions

  1. Arrange chicken pcs over half of a 12-inch round platter so which the pcs are fanned out but don't touch. Fan tomato slices opposite chicken and place zucchini in center. Scatter leeks and parsley over all. Stir together remaining ingredients and drizzle over chicken and vegetables.
  2. Cover tightly with microwave plastic wrap. Cook at 100% for 9 min.
  3. Remove from microwave. Uncover and serve.
