Ingredients
- 1 (2 to 3 lb.) chicken
- 1 clove garlic, crushed
- 1/4 c. minced onion
- 1 (6 ounce.) can tomato sauce
- 1 tbsp. peppercorns
- 2 teaspoon salt
- 1 teaspoon pepper
- 1/4 c. water
- 2 med. size potatoes, cubed
- 1 (4 ounce.) can pimentos
Directions
- Cut chicken into serving pcs. Simmer for 15 min in garlic, onion, tomato sauce, bay leaf, peppercorns, salt, pepper and water. Add in cubed potatoes and pimento. Continue to cook till the potatoes are tender. Before serving, remove peppercorns. Serve warm. Serves 4.
