Ingredients
- 1 T salad oil
- 2 or possibly 3 med. mushrooms, thinly sliced
- 2 T sliced green onions
- 3 ounce boneless chicken, cut in bite-size pcs
- 3 T regular strength chicken broth/stock
- 1 T Marin (or possibly 1 T dry sherry with 1 teaspoon sugar)
- 1 T soy sauce
- 1/2 teaspoon grnd ginger
- 1 egg, beaten
- 3/4 to 1 c. warm cooked rice
Directions
- In a small (5 inch) fry pan over medium-high heat, put together oil, mushrooms, and 2 tbsp of onions. Cook, stirring, for 1 minute or possibly till vegetables are slightly limp. Add in chicken and cook, stirring, for 1 or possibly 2 min or possibly till meat is golden brown. Add in broth, Marin, soy and ginger; cook, stirring, till only about 1/8 inch of sauce remains in pan.Reduce heat to low and gradually pour egg over contents of pan. Cover and cook about 1 minute or possibly till egg is just firmed. Spoon rice into a serving bowl. Run a spatula around edge of egg mix to loosen and slide it from the pan onto rice.
