%20should%20only%20use%20a%20special%20pig%20type%20coming%20from%20the%20Ningxiang%20county,%20a%20type%20of%20pig%20that%20has%20been%20bred%20for%20nearly%20a%20century%20and%20considered%20as%20an%20%E2%80%9Cagricultural%20treasure%E2%80%9D.%3C/p%3E%3Cp%3EA%20really%20nice%20dish%20which%20is%20best%20paired%20with%20a%20simple%20steamed%20rice%20and%20simple%20vegetable%20greens.%20The%20one%20I%20made%20was%20amazing,%20the%20texture%20and%20flavour%20is%20just%20perfect%20but%20I%20can%E2%80%99t%20call%20it%20authentic%20as%20I%20used%20New%20Zealand%20Pork%20instead%20of%20that%20Ningxiang%20ones.%3C/p%3E%3Cp%3E1%20thumb%20sized%20ginger,%20thinly%20sliced%202%20pcs%20star%20anise%204%20pcs%20dried%20red%20chilies%202%20cinnamon%20sticks%20fish%20sauce%202%20tbsp%20peanut%20oil%20spring%20onions,%20to%20garnish%3C/p%3E%3Cp%3EIn%20a%20wok%20add%20water%20enough%20to%20cover%20pork.%20Boil%20then%20drop%20pork%20pieces%20and%20boil%20for%204%20minutes.%20Discard%20water%20used%20for%20boiling%20then%20remove%20pork%20and%20rinse%20with%20cold%20running%20water,%20set%20aside.%20Rinse%20wok%20and%20place%20it%20back%20into%20the%20stove%20top,%20add%20oil%20and%20sugar,%20cook%20in%20low%20heat%20until%20sugar%20melts.%20Once%20sugar%20is%20melted%20bring%20heat%20up%20and%20cook%20until%20colour%20turns%20rich%20caramel%20brown%20colour.%20Add%20the%20pork%20and%20stir%20fry%20until%20pork%20is%20all%20coated%20with%20the%20caramel.%20Add%20the%20Chinese%20cooking%20wine%20and%20mix%20while%20boiling.%20Pour%20enough%20water%20to%20cover%20the%20pork%20then%20add%20the%20soy%20sauce,%20ginger,%20star%20anise,%20dried%20red%20chilies%20and%20cinnamon%20sticks.%20Bring%20to%20a%20boil,%20cover%20wok%20tightly%20then%20simmer%20in%20low%20heat%20for%2050%20minutes%20to%20an%20hour.%20Turn%20heat%20to%20high%20to%20reduce%20the%20sauce,%20cook%20for%2010%20more%20minutes%20or%20until%20the%20sauce%20is%20sticky%20and%20thick.%20Season%20with%20fish%20sauce%20then%20garnish%20with%20spring%20onions.%20Turn%20heat%20off%20then%20serve.%20%203.2.2925%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
