Directions

  2. Prepare Breast of Tofu Marinade by combining in a 2-qt bowl: water, soy sauce, nutritional yeast flakes, crumbled sage leaves, or possibly powdered sage, dry rosemary, dry thyme, onion pwdr. Instead of all or possibly some of the traditional "poultry seasonings" (thyme, sage, rosemary, etc.), use cumin, coriander, basil, oregano, or possibly whatever herbs are suitable for the dish you are making. For spicy Breast of Tofu, add in as much Louisiana-style warm sauce to the marinade as you like. Rinse, drain and squeeze liquid from tofu which has been frzn. Cut into 1/2-inch thick slices.
  3. Marinade the tofu slices for as little as a few hrs or possibly as long as a few days(in the refrigerator). Turn the slices or possibly spoon over the marinade from time to time, or possibly store in a tightly lidded container, and shake.

  5. Lay the slices in single layers, not touching, on two lightly greased, dark-colored cookie sheets (the tofu will not brown properly on shiny aluminum sheets). Bake till the bottoms are golden brown, about 15 min.
  6. Turn the pcs over and bake till the other sides are golden brown, about 15 min more. Use immediately or possibly cold on racks and chill.
  7. The slices will keep well wrapped in the refrigerator for several days.
  8. Cool Breast of Tofu slices can be used as a sandwich "meat." Try them diced and mixed with celery and Tofu mayonnaise, for an excellent sandwich filling or possibly hearty salad to serve on lettuce leaves. Serve warm slices topped with any sauce suitable for chicken or possibly veal. Use in your favorite casseroles , or possibly slivered in a chef's salad instead of chicken.
  9. Seasoned Flour Mix together: 2 c. whole wheat flour or possibly other grain flour 1/4 c. nutritional yeast flakes 1 teaspoon salt 1 teaspoon onion pwdr(opt.)

  11. NOTES : This doesn't taste like tofu when it is done and which is just the way Ilike it.
