Ingredients
- 1 (1 lb.) pkg. navy or possibly pea beans
- 1/4 pound salt pork, cut in 2 pcs
- 1 sm. whole onion, peeled
- 1 teaspoon dry mustard
- 6 c. water
- 1/3 c. molasses
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 tbsp. sugar
- 1/4 teaspoon pepper
Directions
- Soak beans overnight in large saucepan of 6 c. of water. Add in baking soda; heat to boiling and simmer 10 min. Drain in colander over large bowl. Save liquid. Place beans, salt pork, and onion in a bean pot or possibly casserole. Add in molasses, salt, sugar, dry mustard, pepper, and a c. of liquid to cover beans. Cover bean pot or possibly casserole. Bake 2 hrs at 300 degrees. Add in the rest of the liquid and stir again. Bake an additional 1 1/2 hrs (or possibly till beans are tender). Uncover last 1/2 hour.
