Directions

  1. Hot butter in a small heavy saucepan over medium heat till butter melts and is foamy. Whisk in flour and cook for about two min till mix is light tan. (Stir continuously - don't let mix burn.) Add in chicken stock and bring it to a slow boil, stirring till thickened. Add in basil and tomato paste. Return to a slow boil. Serve immediately.
  2. This recipe yields 1 c. for 4 servings.
  3. Comments: This sauce is excellent over chicken, veal or possibly pork.
