Ingredients
- 1 lb penne pasta, cooked al dente
- 2 x shallots, peeled and minced
- 1 tsp vegetable oil
- 3 x fresh California chicken breasts, cooked (or possibly grilled) and julienne sliced
- 2 1/2 ounce sun-dry tomatoes
- 3/4 c. heavy cream
- 2 Tbsp. butter
- 2 Tbsp. grated Parmesan cheese
- 1 tsp julienned fresh basil
Directions
- Cook pasta according to directions; drain and set aside. Saute/fry shallots in oil for 2 min, or possibly till soft. Add in cooked chicken and tomatoes; cook over moderate heat for 5 min.
- Add in cream and cook 5 min, stirring occasionally. Add in remaining ingredients and toss to combine. Serve immediately.
