  1. Combine watermelon rinds with just sufficient water to cover and bring to a boil. Simmer till tender and drain. Add in the rest of the ingredients. Pour into a pie shell. Bake at 450 degrees till brown. Reduce heat to 350 degrees till filling is set like pumpkin pie. Top with Cold Whip.
