Directions

  1. Heat above ingredients in microwave and stir. Pour into 2 cups flour and 2 cups sugar.Mix the following in a separate container: 2 large eggs 1 teaspoon cinnamon 1 teaspoon baking soda 1 teaspoon vanilla
  2. If you don't have buttermilk, you can make it with 10 tbsp sweet lowfat milk plus 3 tbsp vinegar. This will equal 1/2 cup.
  3. Mix these ingredients and pour into the first ingredients. Stir well by hand. Pour into a greased and lightly floured rectangular baking pan and bake at 400 degrees for 20 min.
  4. Bring first 3 ingredients to a boil in microwave. Remove and add in vanilla. Beat by hand or possibly mixer as you add in powdered sugar till smooth. Poke hot cake full of holes with a fork and pour hot frosting over hot cake. Cool and serve.
