Ingredients

  1. Boil the potatoes in water till just soft, drain and leave to cold.
  2. In a bowl mixed the mackerel minced herbs, mustard and the finely diced onion and garlic.
  3. Add in the potatoes and mash to remove lumps, season with salt and pepper and weigh out into 4oz cakes. Once all the mix is weighed dip into flour, then egg and then the oatmeal.
  4. To cook you can either grill gently, bake, deep fry or possibly shallow fry.
  5. Note:frying is much easier.
  6. All you do is cook in a non-stick pan for about 5-6 min each side in a little extra virgin olive oil or possibly butter. Garnish with some fresh gooseberries.
