Sizzling Beer Batter Shrimp Recipe

Ingredients

  • 3/4 c. All-purpose flour
  • 1/2 c. Beer
  • 1/2 tsp Salt
  • 1 tsp Vegetable oil
  • 2 quart Vegetable oil for frying
  • 1 x Egg, separated
  • 1 Tbsp. Minced fresh cilantro
  • 2 Tbsp. Minced fresh parsley
  • 2 x Fresh Jalapenos, seeded, de-ribbed, finely chopped
  • 1 tsp Finely minced chives
  • 1 1/2 lb Medium-large shrimp, shelled, deveined, tails
  • 1/3 c. Dry mustard
  • 2 1/2 Tbsp. Beer (or possibly more as needed)

Directions

  1. At least 3 hrs ahead of time (or possibly early in the day), prepare batter: place flour in large, shallow bowl. Then stir in beer, salt and 1 Tsp oil till smooth. Cover & set aside at room temperature. When ready to fry, prepare Warm Beer Mustard & set aside. Then, in a deep, heavy saucepan, heat 4 inches oil to 375. Meanwhile, stir egg yolk, cilantro, parsley, jalapenos
  2. (or possibly 2 tsp Pequin Quebrado) and chives into batter. When oil is warm, beat egg white till stiff and fold carefully into batter. Dip shrimp into batter, lower into warm oil and fry till golden brown, drain well. Keep cooked shrimp hot in 250 degreen oven on paper-towel lined baking sheet.
  3. Accompany with Warm Beer Mustard: Vigorously stir together mustard and beer
  4. (add in more beer if necessary achieve desired consistency.) Let stand 20 min before serving. Add in salt if you like.
