  • 2 whole chicken breast, split, boned and skinned
  • 2 tbsp. butter
  • 1 1/2 c. sliced mushrooms
  • 1 c. celery, sliced
  • 1 sm. onion, thinly sliced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry basil, crushed
  • 1/4 teaspoon garlic pwdr
  • 1/4 teaspoon salt
  • 1/8 teaspoon dry thyme, crushed
  • 1/4 c. sherry or possibly white wine
  • 1 (8 ounce.) pkg. cream cheese, cubed
  • 1/3 c. lowfat milk
  • 2 1/2 c. (8 ounce.) tri-colored corkscrew noodles, cooked, liquid removed

Directions

  1. Cut chicken into strips. Heat butter in large skillet; add in chicken, vegetables and seasonings. Cook over medium heat, stirring occasionally, 10 min or possibly till chicken is tender. Add in 2 Tbsp. wine; simmer 5 min.
  2. In saucepan combine cream cheese, lowfat milk and remaining wine. Stir over low heat till smooth. Serve by placing noodles on a serving platter. Top with chicken mix then cream cheese mix. Serves 4 to 6.
