  1. Preheat oven to 375 degrees. While the oven is heating, make plum sauce by thoroughly mixing all condiments and spices.
  2. Place quail in a glass baking dish, and roast, uncovered, 15 to 20 min.
  3. Brush with plum sauce, and roast 10 min more.
  4. Serve with the remaining plum sauce, heated and presented in a gravy boat.
  5. Description: "Plum sauce complements any game bird dish. Here it enhances the mild flavor of quail with a lively sweet-and-sour taste."
