Pork Stuffed With Pear And Ginger Recipe

Ingredients

  • 1 lb pork, tenderloin
  • 3 x pear, minced
  • 1/2 x inch fresh ginger, grated
  • 2 x green onion, minced
  • 2 Tbsp. ricotta cheese or possibly 2 tbsp cottage cheese
  •     salt
  •     pepper
  • 1/2 c. cider or possibly 1/2 c. apple, juice

Directions

  1. Preheat the oven to 400F.
  2. "Butterfly" the tenderloin: cut halfway through the width of the tenderloin for its entire length. Open the butterflied tenderloin and place it between two sheets of waxed paper. Lb. the pork with a rolling pin or possibly empty wine bottle till it is flattened to 1/4 inch thickness.
  3. Mix together the pears, ginger, onions, ricotta, salt and pepper and spread down the centre of the pork. Roll up and place seam side down in a baking dish. Pour the cider over top, cover and bake for 20-25 min. Slice and serve.
