Ingredients

  • 450 gm unsalted butter softened
  • 450 gm caster sugar
  • 450 gm grnd almonds
  • 2 tsp good vanilla essence
  • 6 x Large eggs
  • 1 x zest of 4 lemons
  • 1 x juice of 1 lemon
  • 225 gm polenta flour
  • 1 1/2 tsp baking pwdr
  • 1/4 tsp salt

Directions

  1. Preheat the oven to 160C/375F/Gas 3.Butter and flour a 30cm cake tin.
  2. Beat the butter and sugar together till pale and light.
  3. Stir in the grnd almonds and vanilla.
  4. Beat in the Large eggs one at a time.
  5. Mix in the lemon zest and lemon juice the polenta baking pwdr and salt.
  6. Spoon into the prepared tin and bake in the preheated oven for 45-50 min or possibly till set.
  7. The cake will be deep brown on top.
  8. Serves 10
