  1. Mix flour and salt in a mixing bowl. Cut the cool butter in with a pastry blender till the mix resembles coarse meal. Whisk the egg yolk and 2 Tb. cool water together and add in to the flour mix. Blend till the pastry is smooth and holds together in a ball. This pastry won't get tough if you handle it a lot and you can even mix it in a food processor. Bake the pastry dough for 12 min, till lightly browned. Set aside.
  2. Combine the lowfat milk and chocolate in a saucepan and heat, stirring till the chocolate and lowfat milk are smoothly blended.
  3. Combine the sugar, flour and salt in a saucepan. Stir in the lowfat milk/chocolate and cook over low heat, stirring constantly till thick. Add in the egg yolks and continue cooking, stirring for 3 min. Remove from heat and blend in the butter and vanilla. Let the custard cold for about 15 min, then pour it into the pie shell and chill till ready to serve. JM
