Ingredients
- 3/4 c. Softened sweet butter
- Â Â Juice of 1/2 lemon
- Â Â Grated peel of 1 lemon
- 1/3 c. Chopped fresh parsley
- 4 x Crushed garlic cloves
- 3 Tbsp. Chopped shallots
- Â Â White pepper
- Â Â Nutmeg
- 4 x Dz mussels, well scrubbed,
- Â Â Steamed & cooled
Directions
- Combine butter with lemon juice, lemon peel, parsley, garlic & shallots; season to taste with pepper & nutmeg. Combine butter-herb mix in food processor fitted with steel blade; process till well blended. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each with some mix; run under warm broiler 2-3 min, watching carefully. Or possibly bake in 425 oven for 10 min or possibly till bubbly.
