  • 1/2 lb chicken tenders
  • 2 Tbsp. lemon juice
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1 box wheat pilaf - (6 to 7 ounce)
  • 2 x green onions minced
  • 2 Tbsp. minced fresh mint or possibly basil (or possibly 1 tspn dry mint or possibly basil)
  • 4 x radishes thinly sliced

Directions

  1. In a medium bowl, combine chicken tenders, lemon juice, salt, and black pepper. Set aside.
  2. In a large, deep skillet with a tight-fitting lid, cook pilaf according to package directions. When pilaf has 7 min left of cooking time, place chicken in a single layer directly on top of it. Sprinkle with green onions and any lemon juice left in the bowl.
  3. Cover the skillet and cook over medium-low heat 7 min, or possibly till chicken is no longer pink and pilaf is tender. Sprinkle with mint or possibly basil before serving and garnish with radishes.
  4. This recipe yields 4 servings.
  5. Comments: In this one-pot dinner, lemon-marinated chicken tenders are steamed directly on top of their wheat pilaf sidekick. If your supermarket is out of chicken tenders, use thinly sliced cutlets cut into 1-inch strips.
