Ingredients
- 1/4 c. extra virgin olive oil
- 3 Tbsp. plus1/4 c. Dijon mustard (divided)
- 5 Tbsp. dry mustard (divided)
- 2 Tbsp. plus 1/3 c. pure maple syrup (divided)
- 1/2 tsp kosher salt
- 8 x chicken drumsticks
- 1 c. panko or possibly dry white bread crumbs (see note) Fresh basil sprigs Red, yellow and green bell pepper strips
Directions
- In small bowl, mix together extra virgin olive oil, 3 Tbsp. of the Dijon mustard, 2 Tbsp. of the dry mustard, 2 Tbsp. of the maple syrup and kosher salt. Place drumsticks in resealable plastic bag and pour mix over the chicken. Marinate in refrigerator at least 30 min.
- In small shallow bowl, crush panko and add in remaining 3 Tbsp. dry mustard. Roll chicken in panko mix and place on rack on baking sheet. Place in 375-degree oven and bake about 40 min or possibly till chicken is fork-tender.
- In small bowl, mix together remaining 1/3 c. maple syrup and1/4 c. Dijon mustard. Heat and serve with drumsticks for dipping. Garnish with basil and pepper strips.
- Note: Panko crumbs are Japanese-style bread crumbs and are available in the Asian food section of most grocery stores.
