Ingredients

1/4 c. Water
1/4 tsp Cream of tartar
1 dsh Salt
3 lrg Egg whites
1 tsp Vanilla extract

Directions

Combine first 5 ingredients in top of a double boiler; place egg white mix over barely simmering water in bottom of double boiler on cooktop.
Beat at high speed of a hand held mixer till stiff peaks form and candy thermometer registers 160 . Add in vanilla; beat till blended.
