Easy Cinnamon Rolls Recipe

These are easy and figure friendly cinnamon rolls.

Directions

  1. Preheat oven 350 degrees:
  2. Prepare 12 muffin cups:
  3. In a large bowl stir together flour, baking powder and cream of tartar.
  4. Cut in the shortening until mixture is course crumbs. Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until mixture is moistened.
  5. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing it for 10-12 strokes or until dough is nearly smooth. Divide dough in half. Roll each dough half out into a rectangle. In a small bowl stir together sugar and cinnamon. Sprinkle the sugar mixture over the rectangle, and roll.
  6. Cut into 2 or 3 inch pieces and place in the muffin cups.

        I decided to modify this quick bread recipe, and make the following recommendations.
        If you want a more fiber filled recipe, I used 1 cup of unbleached all-purpose flour and 1 cup of whole wheat flour. Instead of shortening, I like to use sweetened butter instead. To prepare your muffins cups, you can use a baking spray that is infused with flour or grease and lightly flour the cups if you have no paper liners available. Allow them to cool for about a minute before you take them out.
        Instead of milk, you could use coconut milk or soy milk, add about a teaspoon of vanilla to the milk. When you are cutting in the butter or shortening to the flour, you can used a potato masher or pastry cutter to speed up the process. When you add the liquid , I would gradually add the liquid and you will see the flour pull away from the sides of the bowl. Kneading the dough on a lightly floured surface and roll it out completely, then half it. Lightly drizzle the rolled out halves with honey. To the cinnamon/sugar mixture I added about 1 Tablespoon of Light Brown Sugar. Spread the sugared mixture over your sections and roll it into a long roll, cutting each section into 6 pieces. I didn't use cream of tartar since baking powder contains cream of tartar, but I did add baking soda. The results were extremely good. Of course, this dough can be prepped ahead of time, wrap in plastic, and you actually might find that the dough is lighter with more time being given for the components to interact with each other.
