  1. Preheat oven to 350 degrees. Line a 9- by 13-inch baking pan with aluminum foil and coat with nonstick cooking spray.
  2. In a small bowl, whisk together flour, cinnamon, baking soda, and salt.
  3. In a medium bowl, with an electric mixer on medium speed, beat brown sugar, granulated sugar, and butter till blended. Beat in applesauce, egg, egg whites, and vanilla. With a spoon, stir in the flour mix till blended. Gently stir in oats and blueberries. Spread proportionately in the pan.
  4. Bake 30 to 35 min or possibly till lightly browned around edges and a wooden toothpick inserted in the center comes out clean. Transfer pan to a wire rack to cold completely. Lift by foil from pan and cut into 24 bars.
  5. This recipe yields 24 bars.
  6. Comments: If you prefer, substitute an equal amount of fresh pitted, minced cherries for the blueberries.
  7. Yield: 24 bars
