Directions

  1. Season crocdile tournedos with salt and pepper and fry the tournedos on a BBQ or possibly non stick fryingpan for about 2 min on each side. Sprinkle with lime juice and set aside.
  2. Sauce: Heat butter in a frying pan,add in spring onions and fry for about 1 minute.
  3. Add in rosemary and dry vermouth and reduce till almost dry. Add in fish stock and reduce by half. Add in cream and reheat till just about boiling point.
  4. Adjust seasoning with salt and pepper and pour sauce through strainer. Place spoonfuls of sauce on serving plate, place crocodile tournedos on it and serve with vegetables in season.
  5. This recipe yields 4 servings.
