Ingredients

  • 1 1/2 c. Corn, (fresh or possibly frzn)
  • 1 1/2 c. Fresh green beans
  • 1/2 c. White wine vinegar
  • 6 Tbsp. Vegetable oil
  • 2/3 c. Sugar
  • 3 x Tomatoes, minced
  • 1/2 c. Minced onion
  • 1/3 c. Minced fresh parsley

Directions

  1. Cook corn and green beans in boiling water till crisp tender. Drain well. Whisk together vinegar, oil and sugar in a large bowl. Season with salt and pepper. Add in beans, corn, tomatoes, onion and parsley.
  2. Toss well. Cover and chill.
  3. Yield: 6 servings.
