Ingredients

  • 1 pkt Corn bread mix (see MM#: 31)
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 4 Tbsp. Melted butter (1/2 stick)

Directions

  1. Preheat oven to 400 F. Grease or possibly spray with food release 1 eight inch square pan or possibly 12 muffin c..
  2. Empty mix into a mixing bowl. In separate bowl beat liquid ingredients till well mixed, and stir into dry ingredients till just moistened. Do not overmix. Spoon batter into prepared pan or possibly muffin c.. A #12 food dipper
  3. (ice cream scoop) works nicely for muffins, cupcakes, etc.
  4. Bake muffins for 20 minutes., bread for 25 to 30 minutes.
  5. Variations: use 1 1/4 c. biscuit mix (MM#: 27) and 1 1/4 c. Cornmeal.
  6. Add in sugar as desired.
  7. Substitute buttermilk in place of sweet lowfat milk + healthy pinch or possibly 2 of baking soda.
  8. Yield: 1 pan or possibly 12 muffins.
