Blueberry Cake Roll Recipe

  • 3/4 c. Powdered sugar, sifted
  • 1/2 c. Unbleached flour
  • 5 x Egg whites
  • 1 tsp Cream of tartar
  • 1/2 tsp Vanilla extract
  • 1/8 tsp Salt
  • 2 ounce Cold whip Lite , thawed
  • 8 ounce Low fat blueberry yogurt, or possibly other flavor Additional powdered sugar, optional

Directions

  1. Line the bottom and sides of a 15" x 10" x 1" baking pan with foil; set aside.
  2. Sift together the 3/4 c. powdered sugar and flour; repeat sifting twice.
  3. In a large mixer bowl, beat the egg whites, cream of tartar, vanilla extract and salt with an electric mixer on medium speed till soft peaks form (tips curl). Add in sugar just 1 Tbsp. at a time, beating until stiff peaks form (tips stand straight).
  4. Sift about one-third of the flour mix over the egg whites; mix in lightly by hand. Repeat, folding in the remaining flour mix one third at a time. Spread the batter proportionately in the prepared baking pan.
  5. Bake at 350i for 20 min, or possibly till done. Cold in pan on wire rack for 5 min. Invert onto a clean dry kitchen towel that has been sprinkled with powdered sugar. Carefully peel off the foil. Starting at the narrow end, roll hot cake and towel together; cold, seam side down, on a wire rack.
  6. Meanwhile, stir together the yogurt and the thawed dessert topping. Unroll the cooled cake and remove towel. Spread the yogurt mix proportionately to within 1" of the edges. Again starting at the narrow end, reroll the cake.
  7. Place in plastic wrap. Cover cake and refrigeratein the refrigerator for up to 6 hrs.
  8. Before serving, sprinkle cake roll with additional powdered sugar, if you like.

  10. NOTES : This angel food cake roll contains only 2 grams of fat per serving! Almost any fruit-flavored yogurt can be substituted for the blueberry; some suggestions: raspberry or possibly mixed berry, strawberry or possibly strawberry-banana, tropical fruit.
