Ingredients
- 1 quart. cleaned scallops
- 1 T extra virgin olive oil
- 1 T lemon juice
- 1/2 teaspoon minced parsley
- 1/2 c. cream
- 1 teaspoon minced chives
- Salt and pepper, lightly applied
- 2 beaten large eggs
- 1/2 c. flour
Directions
- Drain, do not wash, scallops; leave them to stand in a mix of veg. oil, lemon juice, parsley, chives, salt and pepper. Drain well again and, if frying, dip them in a combination of large eggs, flour, and cream.Place scallops in a wire basket and fry in deep fat at 375 degrees till light brown. Place in 300 degree oven for a couple min. If broiling, arrange scallops flat, not in layers, till lightly brown. Watch them to prevent over cooking.
