Basic Brazilian Tomato Sauce Recipe

Ingredients

  • 4 Tbsp. vegetable oil
  • 3 x garlic cloves crushed
  • 1 Tbsp. butter or possibly margarine
  • 1 quart minced onion
  • 1 whl fresh tomatoes (1 qt )
  • 1 pt canned tomato sauce
  • 1 quart sliced green peppers
  • 6 x bay leaves
  • 2 Tbsp. salt
  • 1 Tbsp. Tabasco brand Pepper Sauce
  • 1 Tbsp. dry oregano
  • 1 tsp Spanish paprika
  • 1 tsp cumin seed
  • 1 tsp curry pwdr
  • 1 pt dry white wine
  • 1 pt beer

Directions

  1. Mix oil and crushed garlic. In large rondo, heat oil-garlic mix with butter; saute/fry onion lightly.
  2. Add in whole fresh tomatoes and tomato sauce, bring to a boil. Fold in green pepper slices, bay leaves, salt, Tabasco brand Pepper Sauce, oregano, paprika, cumin seed and curry pwdr. Return to a boil.
  3. Add in wine and beer. Reduce heat, simmer about 20 min. (Tomatoes should stay whole.)
  4. Grind or possibly puree half of sauce and strain through a china cap. Reserve remaining half of sauce.
  5. This recipe yields 1 gallon.
  6. Yield: 1 gallon
