  • 1/4 lb salt pork, diced
  • 1 sm onion, sliced
  • 1 x celery rib, minced
  • 1/4 c. tomato paste
  • 3 c. water salt and freshly grnd pepp
  • 1 Tbsp. vegetable oil
  • 1/4 x green pepper, seeded and
  • 1 tsp dry thyme leaves
  • 3/4 c. cooked pigeon peas, (black eyed peas can be substituted
  • 2 c. uncooked white rice

Directions

  1. Fry the salt pork in a large skillet till the fat has been released, then add in the vegetable oil. Add in the onion and saute/fry till translucent/soft. Then add in the green pepper, celery, thyme, and tomato paste. Reduce the heat, cover, and simmer for 5 min. Add in the peas and cook for another 5 min.
  2. Transfer the pea mix to a saucepan and add in the water and salt and pepper to taste. Bring to a boil, add in the rice, and stir.
  3. Reduce the heat when the water returns to a boil. Cook, uncovered, for about 25 min, or possibly till the liquid is absorbed. This is usually served as a side dish.
