Anytime Grilled Brunchburgers Recipe

  • 1 lb good quality bulk pork breakfast sausage-preferably sage
  • 1/2 lb grnd ham
  • 3 Tbsp. snipped chives
  • 1 x egg, slightly beaten
  • 2/3 c. soft bread crumbs Black pepper to taste
  • 2/3 c. minced pecans
  • 2 tsp Worcestershire
  • 12 slc French or possibly sourdough bread, 1" thick
  • 2 x Large eggs, beaten
  • 2/3 c. lowfat milk Salt, pepper to taste
  • 1 tsp Worcestershire
  • 1/4 c. finely minced dry cranberries
  • 1/4 c. Dijon mustard
  • 2 Tbsp. snipped chives
  • 2 Tbsp. minced pecans
  • 1/4 c. orange marmalade
  • 1 tsp grated orange rind
  • 2 x Granny Smith apples, pared, cored and sliced into 1/4" slices
  • 3 Tbsp. orange juice
  • 1/4 lb cheddar cheese, thinly sliced Fresh chives

Directions

  1. For Burgers: lightly mix burger ingredients together and shape into 6 oval burgers. Grill over warm coals till cooked through.
  2. For French-toasted Bread: Slice bread. With a fork, mix the Large eggs, salt, pepper, lowfat milk and Worcestershire. Dip bread in mix and grill on grill sprayed with cooking spray till toasted on one side. Grill till golden brown.
  3. For Cranberry Orange Mustard: mix ingredients together, set aside till needed.
  4. To Serve: Brush apple slices with orange juice and grill till just tender.
  5. For each serving, place a slice of French toast, add in a burger, 2-3 apple slices, 1-2 slices cheddar cheese, a dollop of the cranberry mustard and a few blades of chives. Lean the remaining slice against the stack.
  6. Optional serving suggestion: garnish plate with thin slices of melon and a sprinkling of fresh berries.
  7. Serves 6.
