  • 1 medium yellow pepper, diced
  • 2 tablespoons olive oil, divided
  • 1 bag frozen meatless burger crumbles (MorningStar Farms)
  • 1 - 32 oz jar spaghetti sauce
  • 1-8 oz can tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon cumin powder
  • 1 teaspoon chipotle chili powder
  • 1 cup brown basmati rice
  • 2 cups water
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt
  • 1 tablespoon earth balance margarine
