Ingredients

  • 10 ounce Frzn green beans,defrosted
  • 6 sm new potatoes, unpeeled cooked and diced
  • 1 can Tuna in water,liquid removed (6 ounce)
  • 3 x Flat anchovies, *optional* mashed
  • 2 Tbsp. Pesto sauce
  • 1 c. Mayonnaise
  •     Salt & pepper,freshly grnd to taste
  • 3 Tbsp. Parsley, minced

Directions

  1. Blanch the defrosted green beans for 2 min in boiling water. Drain and plunge in cool water. Drain.
  2. Place the cooked potatoes, beans and tuna in a salad bowl. Mix the anchovies and pesto with the mayonnaise and pour onto the salad. Add in salt and pepper and toss. Garnish with parsley.
